Pizza Pinwheels

Makes 12 servings (5 pinwheels per serving)
Each serving = 250 kcals, 11.5g protein, 38g carbohydrate, 5.5g fiber, 5.5 fat

Ingredients

  • 2 (15 oz) can cannellini beans, drained, liquid reserved
  • ¼ cup liquid from the canned beans
  • 1 (6 oz) can tomato paste
  • 2 tbsp lemon juice
  • 2 tsp olive oil
  • 2 tsp minced garlic
  • 2 tsp ground oregano
  • 2 tsp ground basil
  • 1 tsp salt
  • 1 cup shredded mozzarella cheese
  • 6 large tortillas (whole wheat, spinach or sun-dried tomato)

Directions

  1. Add all the ingredients except the mozzarella cheese to a food processor and pulse for 4-5 minutes until smooth.
  2. Place the mixture into a bowl and stir in the mozzarella cheese.
  3. Spread ½ cup of the mixture evenly onto each tortilla. Roll the tortillas up tightly in plastic wrap and refrigerate for at least 30 minutes.
  4. Remove plastic wrap. Trim off the ends and cut each tortilla into ½ to ¾ inch slices.
