Pizza Dip

Makes 1 ½ cups (6 servings, ¼ cup per serving)
1 serving = 170 kcals, 13g protein, 20g carbohydrate, 4.5g fiber, 4.5g fat

Ingredients

  • 1 (15oz) can cannellini beans, drained, liquid reserved
  • 2 tbsp liquid from the canned beans
  • 1/3 cup tomato paste (about half 6oz can)
  • 1 tbsp lemon juice
  • 1 tsp olive oil
  • 1 tsp minced garlic
  • 1 tsp ground oregano
  • 1 tsp ground basil
  • ½ tsp salt
  • ½ cup shredded part skim mozzarella cheese, divided
  • 3 oz of turkey pepperoni

Directions

  1. Place the pepperoni slices onto a baking sheet in a single layer and bake at 425F for 5-8 minutes or until crispy.
  2. Add all the ingredients except the mozzarella cheese and pepperoni to a food processor or blender. Pulse for 3-4 minutes or until smooth, and then transfer the mixture to a bowl and stir in half of the mozzarella.
  3. Place the dip into an oven safe dish and top with remaining mozzarella. Bake at 425F for 10 minutes or until the cheese is slightly browned.
  4. Serve the dip with the toasted pepperoni slices for dipping.
