Cajun Roasted Okra

Makes 4 servings.
Each serving contains 95 calories, 2g protien, 8g carbohydrates, 7g fat, 4g fiber.
Ingredients
- 1 pound okra, washed and stems removed
- 2 Tbsp olive oil*
- 1/2 tbsp Cajun seasoning*
*We used Red Stick Spice Co. shallot olive oil and
Cajun veggie mojo seasoning.
Directions
- Heat oven to 400°F.
- Add okra to a mixing bowl.
- Pour olive oil and seasoning over the okra and toss until
they are fully coated. - Spread the okra on a baking sheet lined with parchment paper.
- Roast for 30-40 minutes, until okra are soft and brown.
- If desired, add additional
seasoning to taste.
