Avocado Pesto

 

Makes about 12- 2 Tbsp servings

Ingredients

  • 1 cup fresh basil
  • 1 large avocado
  • 1/3 cup shelled pistachios
  • ½ lemon, juiced
  • 5-6 cloves garlic
  • ½ cup olive oil
  • ½- 1 tsp salt
  • ½ cup parmesan cheese, grated

Directions

  • Add all ingredients except the parmesan cheese to a food processor and pulse until smooth.
  • Add the parmesan cheese and pulse a couple of times until incorporated
