Stovetop Frittata

Ingredients

  • 1/4 cup olive oil
  • 1 small onion, diced
  • 1/2 bell pepper, chopped
  • 1 zucchini, cubed
  • 1 yellow squash, cubed
  • 1 medium tomato, diced
  • 1/3 cup sliced green onions
  • 4 cloves garlic, minced
  • 12 Large Eggs
  • 1/2 cup milk
  • 3/4 cup parmesan cheese
  • Salt, black pepper, seasoning salt, lemon pepper to taste

Directions

  1. Heat oil in a medium frying pan over medium heat.
  2. Add the onion, bell pepper, zucchini, squash, tomatoes, and green onions, and sauté for about 10 minutes or until soft. Add the garlic and sauté for 1-2 more minutes.
  3. Whisk together the eggs, milk, cheese, and seasonings. Pour the mixture into the pan over the veggies, making sure the egg mixture is well distributed in the pan.
  4. Cover the pan and cook for 20-25 minutes, or until the top looks firm.
