Meatloaf Muffins

Ingredients

  • ¾ cup onions, chopped
  • ¾ cup bell peppers, chopped
  • 1 tsp salt
  • 1 tsp pepper
  • ½ tsp thyme, dried
  • 1 tsp garlic, minced
  • ¼ cup soy sauce, reduced sodium
  • ¾ cup beef broth, reduced sodium
  • 2 tsp ketchup
  • 3 lbs lean ground beef
  • 1 cup oats, instant
  • 3 large eggs
  • 1 cup ketchup

Directions

  1. Place the onions, bell peppers, salt, pepper, and thyme in a large pan and cook until the onions are translucent, about 5 minutes.
  2. Add in the garlic, soy sauce, beef broth, and ketchup, stirring until heated through. Allow to cool.
  3. In a large bowl combine the ground beef, oats, eggs, and the cooled mixture.
  4. Coat the muffin tins with non-stick spray and fill each with about 1/3 cup of the meat mixture. Spread 2-3 tsp of ketchup on top of each muffin.
  5. Bake at 350 degrees F for 18-20 minutes or the internal temperature reaches 155 degrees F.
  6. Serve with your favorite recipe of mashed potatoes and peas.
