Meatloaf Muffins

Makes 24 muffins
1 muffin is 140 kcals, 14g protein, 6g carbohydrate, 1g fiber, 7g fat
Ingredients
- ¾ cup onions, chopped
- ¾ cup bell peppers, chopped
- 1 tsp salt
- 1 tsp pepper
- ½ tsp thyme, dried
- 1 tsp garlic, minced
- ¼ cup soy sauce, reduced sodium
- ¾ cup beef broth, reduced sodium
- 2 tsp ketchup
- 3 lbs lean ground beef
- 1 cup oats, instant
- 3 large eggs
- 1 cup ketchup
Directions
- Place the onions, bell peppers, salt, pepper, and thyme in a large pan and cook until the onions are translucent, about 5 minutes.
- Add in the garlic, soy sauce, beef broth, and ketchup, stirring until heated through. Allow to cool.
- In a large bowl combine the ground beef, oats, eggs, and the cooled mixture.
- Coat the muffin tins with non-stick spray and fill each with about 1/3 cup of the meat mixture. Spread 2-3 tsp of ketchup on top of each muffin.
- Bake at 350 degrees F for 18-20 minutes or the internal temperature reaches 155 degrees F.
- Serve with your favorite recipe of mashed potatoes and peas.
