Perfect Pumpkin Donut Holes

Makes 30 donut holes

1 hole= 60 calories, 2g protein, 10g carbohydrate, 1g fiber, 2g fat

Ingredients

  • 1 ¾ cup whole wheat or oat flour
  • ½ tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp allspice
  • 1/8 tsp ground cloves
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 cup canned pumpkin (unsweetened)
  • ½ cup skim milk
  • ¼ cup granulated sugar            
  • ¼ cup butter, melted
  • 2 large eggs
  • 1 tsp vanilla extract

Cinnamon topping:

  • 1 Tbsp cinnamon
  • ¼ cup granulated sugar
  • ¼ cup unsweetened apple sauce

Directions

  1. In a large bowl combine the pumpkin puree, milk, sugar, melted butter, eggs, and vanilla extract. Whisk together until smooth.
  2. In a separate bowl combine the flour, cinnamon, nutmeg, allspice, cloves, baking powder, and salt.
  3. Pour the dry ingredients into the bowl of wet ingredients. Mix until combined and completely moist.
  4. Scoop batter by table spoon into greased mini muffin tins. Bake at 350°F for 10-12 minutes. Allow to cool for 2 minutes.
  5. Combine the cinnamon and sugar for topping in a small bowl. Dip each donut hole into the applesauce and then roll into the cinnamon sugar mixture.
