Ingredients

  • 1/2 cup raisins1
  • 1/2 tablespoons apple juice
  • 1/2 cup whole wheat flour
  • 1/2 cup rolled oats
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 tsp cinnamon
  • 1/2 cup packed brown sugar
  • 1/4 cup apple sauce
  • 1/2 cup mashed ripe banana
  • 1/4 cup low-fat buttermilk (or- 2 Tbsp sour cream + 2 Tbsp milk)
  • 1 teaspoon vanilla extract
  • 2 large egg whites
  • 1/3 cup chopped walnuts
  • Cooking spray
  • Optional: 1 tablespoon powdered sugar

Directions

  1. Preheat oven to 350°.
  2. Combine the raisins apple juice in a microwave-safe bowl.
  3. Microwave at high for 1 minute, and set aside.
  4. Lightly spoon flour into a dry measuring cup; level with a knife.
  5. Combine flour and the next 5 ingredients (flour through cinnamon) in a bowl, stirring well with a whisk. Set aside.
  6. Combine brown sugar and apple sauce in a large bowl, and beat with a mixer at medium speed until well blended.
  7. Add banana and next 3 ingredients (banana through egg whites), beating well.
  8. Add the flour mixture, beating just until combined.
  9. Stir in raisin mixture and walnuts.
  10. Spread the batter into an 8-inch square baking pan coated with cooking spray.
  11. Bake at 350° for 30 minutes or until golden.
  12. Cool the bars completely on a wire rack.
  13. Sprinkle with powdered sugar if desired.
