Flaxseed Cookies

Makes about 40 cookies with 100 kcals, 1.6g protein, 13.9g carbohydrate, 1.3g fiber, and 5g fat each.

Ingredients

  • 1 ¾ Tbsp Margarine or butter
  • 1/3 cup canola or vegetable oil
  • 1 cup + 2 Tbsp sugar
  • 1/3 tsp vanilla extract
  • 1 large egg
  • ½ of 1 large egg white
  • 2/3 cups whole wheat flour
  • 1/3 cup + 2 Tbsp ground flax seeds
  • 1/3 tsp baking soda
  • 2 cups instant oats
  • 1 ½ cups semi-sweet chocolate chips

Directions

  1. Preheat oven to 375 degrees F.
  2. In large mixing bowl, combine margarine, oil, and sugar.  Add whole egg, egg white, and vanilla, and mix until combined. 
  3. In a separate bowl, combine flour, ground flax seeds, baking soda, and oats. Gradually add dry ingredients to wet ingredients, mixing well after each addition.
  4. Stir in chocolate chips.
  5. Spoon tablespoon sized portions of dough onto ungreased cookie sheet lined with parchment paper, and bake for 9 minutes.
